Giddy Up and Go Breakfast "Cobbler"
This breakfast casserole will put a spring in your step to start your day. Giddy Up and Go Breakfast "Cobbler" is a savory cobbler recipe with sausage, eggs, onions, chives and seasoning. The egg mixture is topped with refrigerated biscuits and baked into an amazing sausage and egg casserole that's hearty enough to keep you going all morning long. This recipe couldn't be easier, and it tastes so good you'll want a second piece for sure.

This makes a lot. I am not a big breakfast eater and neither is my daughter so this goes in the category of breakfast for dinner. It is pretty filling. I am not sure what triple cheddar cheese is so I just used medium cheddar cheese and it worked. I also used my own biscuit dough that I dropped by spoonfuls into the baking dish.

This breakfast casserole brings together some great parts of breakfast. I love sausage, biscuits, and eggs, and of course cheese! I will make this recipe as a dinner meal, since we don't eat a large breakfast, then save the recipe to make during the holidays, probably on Christmas morning.

Oftimes our breakfast will consist of eggs, sausage, and biscuits. It hadn't occurred to me to combine the ingredients into a very pleasant casserole. I'd like to try this with some chorizo, since I know that would give the dish a nice kick. I'm partial to the Johnsonville chorizo since it's readily available and comes both as links as well as in bulk.

This is a really unique breakfast item. It combines quite a few regular breakfast foods in one dish. I imagine that the individual flavors will develop nicely during baking to make the finished product taste wonderful. I've never tried buttermilk biscuits with anything savory before, only jam, so this recipe will be a good place to start.
