"Healthy Kale Egg Breakfast Cups - full of flavor & healthy goodness! With kale, sun-dried tomatoes, spicy chicken sausage, mushrooms, & feta. They will surely be the best part of waking up in 2017! INGREDIENTS: 1 tablespoon olive oil 1 medium onion finely chopped 3 cloves garlic minced 8 ounces mushrooms thinly sliced ½ pound hot chicken sausage or sweet if preferred 3 ounces sun-dried tomatoes finely chopped 2 cups chopped kale 8 ounces feta cheese crumbled Pam cooking spray 12- cup muffin pan 1 1/2 cups egg substitute or 6 eggs"

Breakfast is the most important meal of the day. I am always looking for easy breakfast-on-the-go meals as I can't survive the day without eating breakfast. Mornings are so hectic with getting the kids ready for school that I don't get time to eat. I'm going to make these for sure to eat on the run.

These sound like a delicious breakfast option. I would forego the spicy chicken, as I am vegetarian, but the additions I could add are unlimited. Add whatever leftover veggies are in the fridge, some cheese, even a bread crumb topping. These are the perfect eggy base for a whole slew of breakfast possibilities. I think I could even freeze them to reheat in the mornings for breakfast on the go. Thanks for sharing. Adding these to my breakfast Pinterest board.
