Munchkin Donut Holes

Ingredients
- 1 pound ricotta cheese
- 4 eggs
- 1 teaspoon baking powder
- 1 1/2 to 2 cups of flour
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- frying oil as needed
Instructions

In large bowl mix ricotta cheese, eggs, baking powder, 1 cup flour, sugar and vanilla extract. Knead the dough until well mixed. If the dough is too moist add more flour until you get to workable state.

Divide the dough to 30 balls and let them rest for 10 minutes.

Take saucepan with heavy bottom, add frying oil until it covers 1 inch of the surface.

Heat it up to 350 degrees F and fry doughnuts without overcrowding the pan for 1-2 minutes per side or until golden brown.

Sprinkle icing sugar on top and serve.

These munchkin donuts look yummy! My kids love donuts (of course, who doesnt? ) but I dont know why, they love mini donuts like these better than the original holey ones. They can eat a lot of the mini ones. Im glad I found this recipe. It looks easy. I will try this recipe soon. Thank you for sharing!
