Paleo Blueberry Pancakes
"Craving a hearty breakfast? Try these Paleo Blueberry Pancakes made with coconut flour. It will not be the consistency you are used to from all those icky pancake mixes you get from the store – you know the ones I’m talking about. These are thinner and more hearty because they contain four weggs. They have a mild flavor thanks to the coconut flour but I added a bit of pure maple syrup to the batter to make it extra yummy."

Ingredients
- 4 eggs
- 2 tablespoons maple syrup
- 1 cup coconut milk
- 1 cup coconut flour
- 1 teaspoon baking soda
- dash of salt
- 1 cup wild blueberries

Preheat a griddle or skillet. Spray with cooking spray or use coconut oil to grease skillet.

Mix all ingredients together except the blueberries.

Whisk well and then fold in blueberries.

Pour into hot pan and cook for at least 5-6 minutes per side.

Blueberry pancakes were invented in heaven, I am sure. And paleo is even better! We do not follow a strict paleo diet but I do stick to it pretty closely and my family love it. I will be making these for breakfast next weekend and will definitely have to make a double quantity or there will be a riot . lol
