I used everything bagels for this recipe and made this for dinner! I added some crumbled bacon and some chopped scallions as well, just before putting it into the oven. It makes a great make ahead meal for the busy weekdays! You can whip this together in the morning, let it sit in the fridge while you're at work, and just pop it in the oven when you get home!

This is a recipe that I am definitely interested to try! I always have some bagels in my freezer and this would be a great use of the leftovers. Since this recipe is savory, I would probably use a flavored vegetable cream cheese (my favorite!) instead of the plain one. I also think this would be great as a sweet casserole. You could use blueberry, chocolate chip, or even French toast muffins and add in fruit, nuts, shredded coconut, or any other toppings that might work well!

I've used bagels before in a breakfast casserole/bread pudding but I've never made a savory version. This sounds really tempting, though I think I would use onion or everything bagels rather than plain. After all, if you're going to make a savory casserole, then make as many elements as possible savory. Plus since my wife and I are confirmed carnivores, we'd definitely opt for including sausage.
