This recipe look so delicious! The colours from the peppers make this omelette looks so tasty and appealing! I like the addition of the mini potatoes too it will make the omelette nice and hearty. This would make a great holiday brunch or breakfast dish, served with some fresh fruit and warm croissants! Yum!
