1 Minute Egg Burger

NotesYou may replace salami with crispy bacon.

Ingredients
- 1 slice Cheddar cheese
- 1 slice Garlic salami, thick
- 1 tablespoon Mayo
- 1 teaspoon Dijon mustard
Instructions

In a small bowl, break egg, cover and cook in microwave on high for 45 seconds.

Meanwhile, spread mayo on the bottom of your bun and mustard on the top part.

Arrange salami, over mayo, egg over salami, and finish with cheese, put back in microwave for 20 seconds to slightly melt cheese.

Take burger out of microwave, close burger with the bun top, and enjoy!

My husband and I make similar sandwiches to this quite frequently. We switch up what kind of meat we put on it based on what is in the fridge (I am really partial to using ham, especially rosemary ham! Yum!) Adding a tiny bit of sriracha to the sauce gives the sandwich a nice kick. You can also put on some spinach or sliced peppers for a bit of a healthy twist. I really like making these on english muffins too. They are so good and surprisingly filling. A hearty breakfast treat.

This is a really great breakfast standby. I make a similar recipe, but I beat the egg and mix-in a tablespoon of grated cheese and a chopped tomato, before microwaving in the bottom of a mug (it makes a little fluffy omelette exactly bun sized!) What about some smoked salmon for a luxury treat?
