Basil Skillet Potatoes

Ingredients
- 1 tablespoon butter
- 1 small onion, chopped (about 1/4 cup)
- 1/2 teaspoon dried basil leaves, crushed
- 1 can (10.75-ounces) Campbell's Condensed Cream of Celery Soup
- 1/4 cup water
- 1/2 cup shredded cheddar cheese
- 4 medium potatoes (about 1 1/4 pounds), cooked and sliced 1/4-inch thick
Instructions

Heat the butter in a 10-inch skillet over medium heat. Add the onion and basil and cook until the onion is tender.

Stir the soup, water and cheese in the skillet and heat until the cheese melts, stirring often. Add the potatoes and heat through.

If you are looking for an easy to prepare side dish featuring potatoes, this recipe is for you. I have eaten potatoes with different seasonings, but never with basil so this will be a new dining experience. When making this, I would use reduced fat shredded cheddar cheese. This side dish would be delicious served with green beans and meatloaf.

I love scalloped potatoes, but I can never seem to find a recipe where I can make them on the stove and get them as crispy as I like on top. I think I will make this recipe and then transfer them to a baking dish and brown them in the oven.
