- 3 large potatoes, diced
- 1/4 cup vegetable broth
- 1 cup onion, chopped
- 1 cup green pepper, chopped
- 1 cup red pepper, chopped
- 1 cup corn kernels
- 1 teaspoon thyme
- 1/2 teaspoon tarragon
- salt and pepper, to taste
- oil or margarine
Instructions

Parboil diced potatoes until tender, then drain.

In a large skillet, combine broth, onion and peppers. Cook over medium heat about 5 minutes.

Add corn and cook for a few more minutes.

Add vegetables to potatoes and toss with thyme, tarragon, salt and pepper.
- Wipe out skillet and heat oil or margarine. Add potato mixture to skillet and cook until potatoes being to turn golden.

I can eat potatoes any way you make them, and this recipe sounds so appetizing. I want to try it out really soon. I don't have tarragon, is there something else I could use instead? I am not sure what it tastes like even because it is not something I would normally use.
