Kielbasa, Red Potato, and Sauerkraut Stew
Many foods come from different ethnic backgrounds. This kielbasa and sauerkraut recipe is Polish, but you don't have to be in order to enjoy it! Get a bite of flavor in every spoonful of this stew!

Ingredients
- 4 tablespoons butter
- 1 large onion, thinly sliced
- 1 pound sauerkraut, drained
- 1/2 cup dry white wine
- 1 cup chicken stock
- 2 tablespoons wine vinegar
- 2 tablespoons brown sugar
- 1 bay leaf
- salt and pepper, to taste
- 1 pound new red potatoes, cubed
- 1 pound kielbasa, sliced
- 3 tablespoons Dijon mustard
Instructions
- Melt butter and saute onion until golden brown.
- Add sauerkraut, wine, stock, vinegar, brown sugar, bay leaf, salt, and pepper.
- Bring to a boil and then simmer about 20 minutes.
- Add potatoes and kielbasa.
- Stir in mustard and simmer until potatoes are tender (about 30 minutes).
