Ingredients
- 2 cups leftover mashed potatoes
- 1 egg
- 4 ounces cheddar cheese
- 1 cup green onions chopped
- 8 ounces bacon
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
Instructions

Slice the bacon into bits and cook them until crisp.

Mix mashed potatoes, garlic powder, minced green onion, and the bacon bits.

Shape mashed potatoes into balls.

Put a cube of cheddar cheese into the potato ball.

Press potatoes around it until cheese are completely covered.

Roll into a ball.

Dip the ball into the eggs, then dredge into the breadcrumbs.

Place into a baking pan.

Bake at 375°F for 20 minutes.
