7-Up Pound Cake
Bake this 7-Up Pound Cake using a few basic ingredients you probably already have around the house! With easy cake recipes like this one, there's no excuse not to bake. This 7-Up Pound Cake recipe is as easy as 1, 2, 3!

Ingredients
- 3 sticks butter
- 3 cups sugar
- 3 cups cake flour
- 5 eggs
- 2 tablespoons vanilla extract
- 3/4 cup 7-Up soft drink (room temperature)
Instructions
- Pre-heat oven to 325 degrees F.
- Combine butter and sugar. Add eggs (one at a time) and beat well. Add vanilla extract.
- Fold in flour alternating with 7-Up.
- Put in greased and floured cake pan or tube. Bake for 1 hour.

Too much sugar, 3/4 c sugar works well for me because the 7-up has sugar in it. Also, try lemon flavor (1 capful), rum extract (1 capful) and brandy extract (1 capful). Yummy, I've been making this for years. My father taught me to make it.

Really? 3 cups of sugar can be reduced to 3/4 cup? I admit 3 cups is a LOT of sugar but that's a HUGE reduction!

One thing missing here is that the butter, sugar and eggs should be beaten for at least seven minutes. Also, you can use regular flour. I've been making this cake for literally decades and it rises really high. It should be cooked in an angel food tube pan, rather than a bundt pan because of the rise. Otherwise, you have cake batter run all over your oven.

Love this recipe, my mom makes this for all the holiday's including Super bowl! She uses lemon extract has nice flavor!

Just a note, I use 1/2 c. butter flavored shortening and 2 sticks butter because I find that it gives a more moist, great textured cake. Also, be sure that eggs, butter, shortening are at room temp, and I also use regular Gold Medal Flour for this recipe, it also makes a better cake, and no need for the cake flour in my opinion.
