Any type of apple that you like would really be wonderful in this recipe. While I often make this recipe in the fall when the apples are freshly picked. Now a days apples are available year-round in the stores. Ingredients

  • 1 Cup Brown Sugar
  • 1 TBL Cinnamon
  • 1 Cups Granulated Sugar
  • 1 Cup Butter softened
  • 3 Large eggs
  • 2 Tsp. Vanilla Extract
  • 3 Cups All-purpose Flour
  • 2 Tsp. Baking Powder
  • 1 Cup Yogurt (I used Greek Yogurt)
  • 4 Large apples (any kind, approximately 4 cups diced)
  1. Combine the brown sugar and cinnamon in a bowl and set aside.

  2. Add the lemon juice to the diced apples and mix to coat the apples. Add the granulated sugar, and cinnamon to the diced apples and mix. Set Aside

  3. Preheat oven to 350 degrees F. Use a 9 X 13 cake pan and spray with non-stick spray.

  4. In a large bowl, beat the granulated sugar, and softened butter with an electric mixer until smooth and creamy.

  5. Beat in eggs one at a time and add vanilla extract and yogurt.

  6. Whisk the flour and baking powder in a separate bowl. Add a little at a time and mix until just mixed.
