Easy Fruit Cake
Ingredients
- 1 mug milk
- 1 mug sugar
- 1 mug currants or coconut
- 4 ounces margarine
- 2 mugs self rising flour
- 1 large egg
Instructions
Place milk, sugar, currents and margarine in a large saucepan and bring to a boil. Remove from heat and allow mixture to cool for 30 minutes. Add the flour and egg and mix well. Place the mixture in a greased cake tin (10"). Cook at 350 F (180 C) for 1 hour 30 minutes. I've not made this with the coconut but the fruit one is great. I'm no cook and it turns out fine everytime, try it see what you think. If anyone tries it let me know
