    Hummingbird Cake

    Ingredients

    • 3 cups flour
    • 1 1/3 cup sugar
    • 2 tsps cinnamon
    • 2 tsps baking soda
    • 1/2 tsp salt
    • 1 cup finely chopped pecans
    • 3 eggs
    • 1 cup vegetable oil
    • 1 1/2 tsp vanilla
    • 8 ounces can crushed pineapple
    • 2 cups ripe banana

    Instructions

    Mix until well blended. Beat at medium speed for 2 minutes. Pour into a greased and floured 13" x 9" pan. Bake at 350F for 45 to 50 minutes.

    This is the easiest and best cake you will ever make or eat. Much better than a recipe I have used for year. Of course I use BUTTER instead of oil, isn't that what you are supposed to do. Another Texas Grandma.
