- 1 cup butter, softened
- 1 cup powdered Erythritol
- 8 ounces cream cheese
- 8 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon powdered lemon zest or lemon extract
- 2 cups almond flour
- 1 cup heavy cream
- 3 tablespoons powdered Erythritol
- 1 teaspoon vanilla extract
Instructions

Preheat oven to 350F.

Line pound cake pan or loaf pan with baking paper and grease with some butter.

Cream butter in a bowl with Erythritol.

Add cream cheese and beat until smooth.

Add vanilla, eggs, and lemon powder or lemon extract. Beat until smooth.

Fold in almond flour and baking powder.

Stir until smooth.

Pour the batter into prepared baking dish. Bake the cake for 50 minutes or until inserted toothpick comes out clean.
