I've never had a rhubarb cheesecake. In fact, I dont know much about rhubarb. I would like to try this. I love the use of fennel. I like it very much and didn't expect to see it in a cheesecake but think it's a good idea. I also like the fact that this is a no-bake cheesecake. I certainly going to be making this one!
