Olive Oil Lemon Drizzle Cake
"This cake is inspired by the zesty flavours of the Mediterranean. It's a light moist lemon cake made with olive oil instead of butter. It's then topped with a sweet yet sharp lemon drizzle which soaks into the cake giving it loads of flavour. It's just right for an afternoon snack or afternoon tea. It may look simple but it makes up for that in flavour. It's also easy to make and a big hit with children as well as adults."

Olive oil as a main ingredient in a cake recipe? I love it! We use it to grease the pan but using it to star in the dish is such a great concept. Plus, lemon and oils pair so well together. I'm even thinking a little splash of lavender would take this cake over the top on complementary flavors!
