Papaya Cake

Ingredients
- 1 cup very ripe diced papaya
- 3 tablespoons water
- 1 tablespoon baking powder
- 1/2 tablespoon salt
- 1/3 teaspoon cinnamon
- 1/3 teaspoon nutmeg
- 1/4 teaspoon mace
- 1/4 teaspoon ginger
- 1 1/2 cup flour
- 1/4 cup shortening
- 1 cup sugar
- 1 egg, well beaten
- 1 tablespoon lemon juice
Instructions
1. Stew diced papaya and water on the stove for 20 minutes, set aside.
2. Sift together baking powder, salt, cinnamon, nutmeg, mace, ginger and flour.
3. In a large bowl, cream, shortening and sugar until fluffy; add egg.
4. Add flour mixture alternately with papaya liquid. Fold in lemon juice. Pour into a cake pan and bake for 45 minutes at 325 degrees F.
