I said I am going to make this cake but I have to eat gluten free. Instead of looking for gluten free alternatives all the time I am going to make the conventional recipes but with gluten free flour alternatives. In case anyone else is interested, I have sourced an all purpose gluten free flour. It's from Better Batter. Then you must always add in your xanthan gum, about a teaspoon. Some gluten free flour already contains xanthan gum and then you can leave it out of the recipe so check that first.

Did you know that the origin of red velvet cake started in WWII when sugar was scarce? They used beetroot instead. Now it is typically colored with food coloring. That is one of the 'urban legends' surrounding beetroot cake. This recipe seems like a nice easy one. I like the cream cheese frosting. I can't wait to eat this.

I love red velvet cake! I'm surprised I ever tried it, because the red color does look pretty strange. I normally don't like chocolate cake, but red velvet is sooo good.

I never guessed that red velvet cake contained cocoa powder! I like the idea of using beet juice as a more natural alternative to red food coloring. It would increase the sugar content of the cake, though, as beet juice is sweet. I'll suggest adding less sugar to the cake batter if using beet juice instead of red food coloring.

Wow. This looks amazing. My red velvet cakes always turn out too dry, so I am definitely going to give this recipe a try--it certainly looks perfect!
