That pina colada cake sounds absolutely so great. And so does this strawberry lemonade poke cake! I especially like the use of fresh strawberries. Perhaps, adding some lemon zest on top would also be a good topping! I have made a pumpkin poke cake with spiced cake mix and pumpkin puree topped with chopped nuts! Yummy!

Poke cakes are wonderful. I have never tried strawberry lemon, but I will soon. I often make a version of this that I call a Pina Colada cake. I use crushed pineapple in pineapple jello to poke into the cake and then coconut extract and sweetened coconut flakes in the coolwhip frosting. It is simply DIVINE!
