Ultimate Coconut Cake

NOTE ON TIMING: This cake has many steps, but none of them are particularly hard. For convenience, I’d split it up over 2-3 days. On the first day, bake the cake layers and let them cool before wrapping and freezing them. Make the coconut syrup and leave it covered in the fridge. On the second day, make the coconut pastry cream and frosting. Assemble the cake. Serve it then or on the third day.

This cake is for the serious cake lover and the serious baker. It is all from scratch. Even the buttercream is the real deal. Lots of butter and granulated sugar, not powdered. The buttercream is very rich. This is a cake that you want to give yourself plenty of time to make. But, if you are a coconut lover, it is well worth it. I prefer a frosting made with powdered sugar and not so much butter. But, that is what I grew up with.
