Upside down Cake (high Altitude)

Ingredients

  • 1 box yellow cake mix
  • 1 box instant vanilla pudding
  • 1/4 c all-purpose flour
  • 1/3 c light rum
  • 1 c water
  • 3 eggs
  • 1/4 cup oil

Instructions

Beat all on low to blend, and then beat for two more minutes on low. Put starfruit slices and papaya chunks, along with a handful of unsweetened coconut shreds, in the bottom of a two-piece tube pan. Preheat the oven to 375 degrees F. Pour batter on top of this. Gently tap it to get rid of any air bubbles, and then slide it into the oven. Bake about 45 minutes. Let cool in the pan for a bit, then take off outer ring and unmold it onto a rack to cool completely.
