If you have a food processor, you could use the shredding disk and make quick work of those potatoes. So many potato casseroles start off with hash browns or tater tots and it is nice to find one that doesn't. Creamy and cheesy and yummy! The ranch doesn't over power it, but compliments everything nicely.
