Country Corn Frugal Bake

Ingredients
- 1 can (17-ounces) whole kernel corn
- 3/4 cup milk
- 1/4 cup (1/2 stick) butter or margarine
- 1/3 cup cornmeal
- 3 eggs, separated
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/3 cup sliced green onions
Instructions
- Preheat oven to 375 degrees F.
- Drain the corn and add the milk to the liquid to measure 1 1/2 cups.
- In a saucepan, combine the milk mixture and butter. Bring to a boil. Slowly stir in the cornmeal. Bring to a boil and cook 3 minutes, stirring constantly. Remove from the heat.
- Stir in the egg yolks, baking powder, salt, cayenne pepper, green onions, and corn.
- Beat the egg whites until stiff. Fold into the corn mixture.
- Pour into a greased 1 quart baking dish. Bake 30 minutes or until golden. Remove from the oven and serve.

In this recipe "Country Corn Frugal Bake", if you use self-rising cornmeal, would you still put in baking powder and salt? Also, if you didn't have green onions, how much of regular onion could you use? Thank you.
