    Ingredients

    • 1 can (17-ounces) whole kernel corn
    • 3/4 cup milk
    • 1/4 cup (1/2 stick) butter or margarine
    • 1/3 cup cornmeal
    • 3 eggs, separated
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/8 teaspoon cayenne pepper
    • 1/3 cup sliced green onions

    Instructions

    1. Preheat oven to 375 degrees F.
       
    2. Drain the corn and add the milk to the liquid to measure 1 1/2 cups.
       
    3. In a saucepan, combine the milk mixture and butter. Bring to a boil. Slowly stir in the cornmeal. Bring to a boil and cook 3 minutes, stirring constantly. Remove from the heat.
       
    4. Stir in the egg yolks, baking powder, salt, cayenne pepper, green onions, and corn.
       
    5. Beat the egg whites until stiff. Fold into the corn mixture.
       
    6. Pour into a greased 1 quart baking dish. Bake 30 minutes or until golden. Remove from the oven and serve.

    In this recipe "Country Corn Frugal Bake", if you use self-rising cornmeal, would you still put in baking powder and salt? Also, if you didn't have green onions, how much of regular onion could you use? Thank you.
