Grandma's Barley Casserole

Ingredients
- 6 tablespoons butter or margarine
- 1 cup pearl barley
- 1 large onion, minced
- 3/4 to 1 cup raw mushrooms, sliced or canned mushrooms, drained
- 3 cups consomme or chicken bouillon, boiling
- salt and pepper, to taste
Instructions
- Heat 2 tablespoons of butter and saute barley in it.
- Transfer barley to heavy casserole.
- Heat 2 more tablespoons of butter and saute onion in it.
- Add to barley.
- Saute mushrooms in remaining butter and add to other ingredients.
- Stir in hot consomme and salt and pepper to taste.
- Cook, covered, over lowest possible heat until barley is tender and has absorbed the consomme.
- Depending on the kind of barley used, this will take 25 to 45 minutes. Stir occasionally.
