Ham and Cheese Bake

Ingredients
- 1 1/2 cup cooked ham, diced
- 1 1/2 cup frozen or canned mixed vegetables
- 1/2 cup Parmesan cheese
- 1 cup baking mix, like Bisquick
- 1 cup milk
- 2 eggs
- 1 cup Cheddar cheese, shredded
Instructions
- Preheat oven to 400 degrees F.
- Grease a 9-inch pie plate.
- Mix ham, vegetables and Parmesan cheese. In a separate bowl, stir together baking mix, milk and eggs until blended. Fold in the ham mixture and pour into pie plate.
- Bake 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheddar cheese and bake 5 minutes longer or until cheese is melted.
