Mashed Potatoes Baked with Eggs and Cheese

Ingredients
- 4 potatoes medium size
- 2 cups fresh Parmigiano Reggiano, grated
- 2 eggs
- 1 cup milk
- Salt and pepper (to taste)
- 6 tablespoons butter
Instructions
- Preheat oven to 400 degrees F.
- Boil the potatoes until tender. Drain, peel when still hot, mash and place into bowl.
- Add the cheese, eggs, milk, salt and pepper, mixing thoroughly.
- Transfer to a baking dish smeared with butter and bake for about 30 minutes.

@JinieRose, Thanks for your comment. Yes, the butter in this recipe is used only to grease the pan; please feel free to adjust this amount as you wish. The bottom and sides should be greased. Any casserole dish size would work; it depends on how many potatoes you are using, and how many people you are serving. --Editor of RecipeLion

My questions for the writer of "Mashed Potatoes Baked with Eggs & Cheese": 1. What size should the baking dish be? 2. What is the purpose of using all that butter just to smear on the baking dish? >> Why not use a non-stick pan spray with butter flavor? (There is one that uses real butter.) 3. Is the butter used just on the bottom of the baking dish, or on the sides of the baking dish also? Thank You for your recipe. I'm anxious to make & taste this. I'll add meat & maybe a veggie to make it a 'Main Side' Dish.
