Ingredients
- 2 pounds frozen spinach
- 8 ounces cream cheese
- 4 ounces Velveeta cheese, shredded
- 5 strips bacon cooked crispy and crumbled up
- 2 hard boiled eggs chopped
- 1 tablespoon ground mustard
- 1 clove garlic, minced
- 1 cup whipping cream
- 1/4 cup butter
- salt and pepper
Instructions
- Preheat oven to 350 degrees F.
- Add garlic to spinach then cook according to spinach package directions.
- In a sauce pan add cream cheese, whipping cream, ground mustard, and butter. Using low heat melt all ingredients together while stirring.
- In a medium casserole dish stir together spinach, cream cheese mixture, eggs, salt and pepper, and bacon.
- Place it in a 350 degrees F oven for 30 minutes. After it's done, top it with the Velveeta.
