Matt's Easy Chicken Divan
Casserole dishes are sometimes perfect for a busy weeknight. Matt's Easy Chicken Divan is my special treat to you. It is simple to make and will leave the family satisfied. I guess you can say it is simply satisfying. Enjoy!
Ingredients
- 10 ounces frozen package of broccoli, chopped
- 3 cups white cooked chicken meat, chopped
- 1 can cream of chicken soup
- 1 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon curry powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh cracked pepper
- 2 cups sharp Cheddar cheese, grated
- hot cooked rice, to serve
Instructions
- Preheat oven to 350 degrees F.
- Remove the broccoli from the package and thaw in the microwave for 2 – 3 minutes.
- Drain broccoli and add to the bottom of a greased casserole dish along with the chopped chicken.
- Combine the remaining ingredients except the cheese into a mixing bowl and stir until combined.
- Pour the mixture over the top of the broccoli and chicken and top with grated cheese.
- Place the casserole into the oven and bake 30 – 35 minutes until browned and bubbly. Serve over hot cooked rice.

Was a very good recipe, easy to make. The only thig different I did was add 1/4 cup milk not water to soup. I have made a copy for both of my daughter-inlaws to try. I will be making this again, try left over turkey instead of chicken just as good

In step 5 -pour the mixture, etc. my mixture was so thick that it had to be spooned, was the cream of chicen soup to be mixed w/water or any other liquid, made this last night, delicious!

Hi, crazy mama. I don't believe the soup should be combined with water, unless the directions on the can specify that water is needed. If you found the mixture to be a little too thick, I'm sure you could add a little water to get your desired consistency. However, it sounds like you enjoyed it as is! :)

Is that one can of cream of chicken and one can of mushroom (Two cans of soup?)? Or is it just one can of chicken and mushroom????

That's a good question.. was wondering that myself. I don't think I have ever seen cream of chicken and mushroom soup.
