Stupid Chicken Casserole is truly one of the easiest chicken dinners you'll ever make. Ingredients

  • 1 box wild rice mix, with herbs
  • water (per rice instructions)
  • 1 can French onion soup
  • 1 can cream of chicken and mushroom soup
  • 3 chicken breasts, cut in half
  • fried onions for topping
  • chopped parsley for garnish

Instructions

  1. Preheat the oven to 350 degrees.  Lightly spray a 9x13 casserole dish with cooking spray and set aside.
     

  2. In a bowl, mix the rice and herb packets according to package directions.

  3. Add french onion soup and cream of chicken and mushroom soup.  Stir well to combine.
     

  4. Pour the mixture in the bottom of a 9x13-inch casserole dish. Nestle chicken pieces into the rice mixture. Cover the dish with foil and bake for 30-35 minutes until the rice has absorbed the moisture and the chicken is cooked through.
     

  5. Top with the fried onions and chopped parsley before serving.

You know, "little old ladies" and "grandmas" aren't the only ones who make this. It's one of those timeless recipes that even those who don't have the actual recipe can throw together. Maybe ratchet back the old person rhetoric (my friend's mother was really annoyed by that, but hey). Anyway, casseroles like this are also highly adaptable to additional ingredients that personalize it into your own "signature" casserole without adding extra work, like substituting cream of celery soup for the mushroom for those who don't like that flavor, and sprinkling the top with the crunchy onions you use for green bean casserole. Another idea, and one that I'm going to use, is condensed cheddar broccoli soup in place of the cream of chicken. Either way, thanks for posting this. It's a keeper!

Oops! Not the fried onions (you already had that) - mini parmesan croutons just before the end of cooking time.

I get it...you don't have to be a genius to make and enjoy this Stupid Chicken Casserole. It is so easy, and full of flavor, and of course, my favorite thing about it...it's a "one pot wonder". Just throw it all together, pop it in the oven, and you're done. Add some green beans and a tossed salad and you've got a great week night dinner without any of the fuss.

Hahahaa! I loved the name of this dish so just had to make it for our lunch today and it really was stupidly easy and very tasty too. The only change we made was to add some crumbled crispy cooked bacon into the ingredients (because there was a little left over from breakfast) and I mixed the fried onions into the chicken mixture before cooking, instead of on top at the end. Try it and enjoy!

Wow, I don't think this recipe could really get much easier. I love that the idea is quick and simple for a day that you know is going to be super hectic and you just want to come home to a hot meal and go to bed. Thanks for the ideas and coming up with a simple yet tasty dish.
