One Pot Chicken and Rice Dinner
This One Pot Chicken and Rice Dinner is a main dish and a side dish all in one pot! Easy one pot recipes like this are great for family dinners or last minute meals. Serve it with a side salad and you'll have dinner on the table in about one hour!
Ingredients
- 1 tablespoon olive oil
- 1 cup onion, finely chopped
- 2 garlic cloves, peeled & minced
- 3 cups chicken broth
- 1 can chili style stewed tomatoes
- 1/2 teaspoon salt
- black pepper to taste
- 1/2 teaspoon cumin
- 3 cups chicken, cooked and diced into bite-sized pieces
- 1 1/2 cup black beans, drained and rinsed
- 1 cup long grain rice, uncooked
Instructions
- In large soup pot, heat olive oil over medium heat; add onion and garlic. Saute 10 minutes.
- Add chicken broth, tomatoes, salt, pepper, and cumin. Bring to a boil, reduce heat and simmer 10 minutes.
- Stir in chicken and beans, simmer 10 minutes.
- Stir in rice and simmer 20 to 25 minutes.
