Ingredients
- 1 (16-ounce) package frozen stir fry vegetables, thawed
- 2 cups cut-up, cooked chicken
- 1 (10-3/4-ounce) can condensed cream of chicken soup
- 1 cup Bisquick mix
- 1/2 cup milk
- 1 egg
Instructions

Preheat oven to 400 degrees F.

Mix vegetables, chicken, and soup in ungreased 2-quart casserole dish.

Stir remaining ingredients in small bowl with fork until blended. Pour into casserole dish.

Bake for 30 minutes or until top of pie is golden brown.

I have so many chicken pot pie recipe's but this Paula's Covered Chicken Pot Pie is my "go to" recipe every time I'm in a pinch for what's for dinner. It's so easy to prepare, tastes great, and it's uses up leftover chicken. Put it all in a casserole dish and pop it in the oven...bam, dinner is done.

Just the words "chicken pot pie" are comforting. We are going into winter here in South Africa and I find myself wanting to eat things like this again. What an easy way to cook chicken pot pie and it looks so delicious. Yummm I can't wait to make this one.

One of the things I've always loved about pot pie is the crust...can the Bisquick mix be used on the bottom as well to form a crust or would it burn? I really like that stir fry veggies are used in this recipe and I'm betting if instead, you substituted a mushroom medley with some cheese it would be amazing!

A simple hearty meal that everyone in the family will enjoy. This is one of those wonderful quick and easy dishes to prepare and then you pop it into the oven and spend valuable family time while it cooks itself. Bisquick mix is not available here in South Africa so we had to be a little bit inventive but it turned out fine. The best part is that this dish tastes good so you can make it again and again.
