Chicken Breasts Glazed with Sweet Marmalade
Ingredients
- 3 Tsp extra Virgin olive oil
- 2 - 3 boneless and skinless chicken breast halves, pound to 1/4 in.thick
- 1/2 cup Italian style breadcrumbs
- 1 tsp oregano
- 1 tsp marjoram
- 1 egg, beaten to blend
- 1/4 cup Grand Marnier
- 1/4 cup orange marmalade
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon Worcestershire sauce
- 1/4 teaspoon Dijon mustard
- 1 teaspoon minced garlic
Instructions
Combine breadcrumbs, oregano and marjoram. Mix together in a bowl egg, Gran Marnier, marmalade, lemon juice, Worcestershire, Dijon and garlic. Dip chicken in egg then breadcrumbs to coat. Cook in hot skillet with olive oil about 3 minutes per side.
