Chicken Fricassee
Ingredients
- 2 T corn oil
- 1 broiler-fryer chicken, cut in parts
- 2 c sliced onions
- 1/4 pound mushrooms, sliced
- 4 c chicken broth
- 1/2 t salt
- 1/8 t pepper
- 6 ounces wide egg noodles
- 2 T corn starch
- 1/4 c milk
Instructions
Yield: 4 servings. In 5-quart dutch oven heat corn oil over medium-high heat. Add chicken a few pieces at a time. Brown well on all sides. Remove chicken. Drain excess fat. Add onions and mushrooms. Cook, stirring, 5 minutes. Stir in chicken broth, salt and pepper. Stir in noodles. Add chicken. Bring to boil. reduce heat; cover and simmer, stirring occasionally, 20 to 30 minutes or until chicken and noodles are tender. With slotted spoon remove chicken and noodles. Keep warm. Stir together corn starch and milk. Stir into dutch oven. Stirring constantly, bring to boil and boil 1 minute. Serve over chicken and noodles.

I think if I use boneless, skinless chicken breasts that my husband would love this dish. For some reason, he cannot eat chicken off the bone. My daughter is the same way, but if I use boneless, they eat it up. I love the easy prep and that you use the drippings to make the sauce. It adds so much richness.
