This was a new way of making fajitas to me, having always done it in a skillet before. I like the marinade for the chicken, and I might give it a try for some other chicken dishes. Fajitas are a nice quick meal to put together, and this is an interesting and different way of cooking everything. In a pinch, I've used the three pepper and onion blend bag of frozen vegetables from Kroger, but I like to use fresh when it's possible.
