Skinny Fried Chicken
"Imagine how excited I was to have the opportunity to test this Skinny Fried Chicken from David’s new cookbook: Back Around the Table: An “In the Kitchen with David” Cookbook. It is juicy on the inside and perfectly crisp on the outside but is very low in fat! Tender chicken is marinated in buttermilk and coated in a spiced cornflakes mixture. Bake it on a wire rack, and you are on your way to wonderful “fried” chicken that never touched any oil!"

I love that there is a skinny version of fried chicken. I never thought it possible. I rarely have fried chicken because of the calories in it but this looks like an amazing alternative. I am very curious about the buttermilk in this recipe as I have only ever used it in baking.
