Harissa Chicken Traybake
"This harissa chicken traybake is a delicious sheetpan dinner that is so easy to prepare. It uses chicken legs and thighs marinated in a mixture of harissa and vinegar. The chicken pieces are then roasted in the oven along with some vegetables. This recipe uses onions, eggplant and carrot but it's also great with butternut squash and cauliflower. The recipe serves 4 but can easily be scaled up to serve more people. The leftovers are also delicious reheated the next day or can even be popped in a lunchbox or picnic."
