Amaretti With Cocoa
For a fun and incredibly delicious change to traditional amaretti cookies, bake this version with cocoa. They're so good, they just melt in your mouth...and you can't eat just one!
Ingredients
- 4 eggs
- 2 cups sugar
- 1 small bottle almond extract
- 3 tablespoons cocoa powder
- 6 cups ground almonds
- 1/2 cup confectioner's sugar
- water
Instructions
COOKIES
- Preheat oven to 350F degrees.
- Beat eggs, add sugar and almond extract.
- Mix cocoa and almonds; combine with egg mixture.
- Drop by spoonfuls on a cookie sheet lined with parchment.
- Bake at 350F degrees for 8-10 minutes.
GLAZE
- Stir water into confectioner's sugar, a teaspoon at a time, to make a thin glaze.
- Roll warm cookies in glaze and allow to cool to set.

The cookies are very good-made 1/2 recipe. Might have used too much almond extract - How many tsp are in a small bottle?

Hello user veronicah, That's apparently what the recipe calls for. But I would suggest maybe starting with half of that and add to see if the consistency is what you'd like. Many of our recipes are reader submitted, so sometimes other reader suggestions really can make recipes better. Thanks for the feedback!
