Amaretto Apricot Chews Cookie Recipe
"A wonderfully soft and chewy oatmeal cookie with a subtle almond flavor and chunks of dried apricots and chopped almonds. The icing is made with Amaretto and confectioners sugar so it has a bit of an adult kick. Mix the ingredients together and drop dough by rounded teaspoons onto an ungreased cookie sheet. Bake for 8 to 10 minutes or till golden brown in a 375° oven. The cookies are really easy to make and the recipe makes about 80 small cookies, so it’s perfect when you’re making lots of gifts."
NotesUse a teaspoon cookie scoop to drop the dough from this recipe and you’ll make about 80 cookies!
If desired, omit amaretto. In dough, substitute ½ teaspoon almond extract and 2 teaspoons water. In icing, substitute ¼ teaspoon almond extract and 2 to 4 tablespoons of water.

- 1 cup All-purpose flour
- 1 teaspoon Baking soda
- 1 cup Margarine or butter (2 sticks)
- 3 cups Light brown sugar (packed)
- 1 cup Sugar
- 1 Egg
- 1 tablespoon Amaretto
- 2 cups Regular or quick cooking oats
- 1 cup Snipped dried apricots
- 1 cup Finely chopped almonds
