Stuffed Flank Steak

Ingredients
- 1 to 1 1/2 lb flank steak, scored on both sides
- 3/4 cup bread crumbs
- 3 to 4 oz mushrooms, sliced thinly
- 2 Tbsp melted butter or margarine
- 2 Tbsp grated Parmesan cheese
- 2 tsps olive oil
- 1 (3/4 oz.) package brown gravy mix
- 1/2 cup dry red wine
- 2 Tbsp mined green onions
- 1/2 cup currant jelly (optional)
Instructions
Combine bread crumbs, mushrooms, butter and Parmesan. Spread over flank steak. Roll up like jelly roll, Fasten with skewers or string. Pour olive oil into slow-cooker. Roll steak in oil, coating all sides. Prepare gravy mix according to package directions. Pour gravy, wine and onions over meat. Cover and cook on low for 8 - 9 hours. Remove meat from pot; slice. Add jelly to sauce and stir until dissolved. Serve over meat. Makes 4 - 5 servings.
