What? You can turn carrot cake into a cheesecake dessert? I am in heaven right now. My mom loves carrot cake, and I love cheesecake, so I think I am going to make this dessert and take it over to her house and share it with her. I will make one to leave at home for the hubby and kids, but I want to make one to take to my mom and dad's house.

Delicious! There is no other word for these! Also, it's a very easy and well written recipe. My husband has been wanting a carrot cake for awhile, while I have been wanting a cheesecake. This is the perfect blend of two wonderful things. I did use homemade apple butter instead of applesauce, as that is what I had on hand. I just reduced the sugar to a little over half a cup. This is a great recipe to have on hand for a light dessert or for a pot luck.

This sounds like a great way to make carrot cake. I have never used applesauce before. This seems easy to make with the cream cheese in the batter instead of using it for the icing. I will definitely give it a try. I am a big fan of carrot cake.

I liked these bars better than a big cake. It works well when you need smaller pieces, like for a potluck. The spices are a true carrot cake and not a spice ake. I've noticed that sometimes a spice cake is mislabled as a carrot cake.
