    Ingredients

    • 2 egg whites
    • 2/3 cup sugar
    • 2 cups flaked coconut
    • 1/2 gallon purchased Mango or Pineapple-Coconut sorbet or tropical flavored sherbet

    Instructions

    1. Pre-heat oven to 325 degrees F.
       
    2. Beat egg whites with electric stand or hand-held mixer until stiff peaks form.
       
    3. Gradually add the sugar. Fold in coconut.
       
    4. Drop by tablespoonfuls on baking sheet sprayed with cooking spray.
       
    5. Bake for 30 minutes until golden brown.
       
    6. Turn off oven, open door slightly and cool completely in oven.
       
    7. Place two Coconut Macaroons in a dessert bowl with a scoop of sorbet or sherbet.
