Can you say winner? I love that you use a can of soda in this recipe. I bet it makes this dessert much fluffier and lighter. My favorite part is that the entire recipe is homemade using natural ingredients. It is very inexpensive to make when you are on a budget or need to make several cakes for a party.

Lemon curd poke cake is inspired. Poke cakes are awesome made with pudding. I am not fond of the jello kind. I love lemon curd. I really don't care too much about the meringue. If it were me, I would not bother. My family loves meringue though. If you have a stand mixer, making meringue is so easy.
