This is kind of like a flour free oatmeal cookie with yummy lemon filling! Not overly sweet, but sure to satisfy any sweet tooth! This oatmeal cookie crust works perfectly in this light and fluffy lemon tart! It is a really great base for a fruit-flavored cheesecake or a key lime pie, as well! I'd recommend adding a garnish of lemon slices on top of this tart just because it can look a little plain from the outside!
