Marshmallow Brownie

"As homemade brownies go, they don’t come any better than these marshmallow brownies, with marshmallow made from scratch or, more sensibly, Marshmallow Fluff. Marshmallow is basically a meringue made with hot sugar syrup, instead of sugar. In addition, the sugar syrup is mainly corn syrup which makes everything stickier and generally more marshmallowy. Making the syrup is easy but making the marshmallow means everything is splattered in sticky hot stuff. So if you want a challenge, follow my example, otherwise go and buy a tub of Marshmallow Fluff."
