Paleo Almond Chocolate Chip Cookies
"These Paleo Almond Chocolate Chip Cookies taste so good, you won't notice they are healthier. They are oh so satisfying and the perfect treat to help you meet your New Year's goals. You must try this Paleo Almond Chocolate Chip Cookie. I know I always say everything is good but this is definitely on my short list of great. It’s not so bad for you…hard to believe! It only contains six ingredients and they are so easy to make. It’s weird how that almond butter and egg can mesh together to make what tastes like a cookie with flour. It’s amazing!"

Ingredients
- 1 cup all natural almond butter
- 1 cup chocolate chips (I used Enjoy Life mini chips - paleo approved)
- 1 cup coconut sugar
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon almond extract (optional)

Preheat oven to 350º F.

Mix all ingredients in a large bowl.

Scoop with a mini ice cream scooper onto a parchment lined cookie sheet.

Bake for about 9-11 minutes.

This looks yummy! I'm not a huge fan of crispy cookies, which is what these look like. But I'm sure that they're still delicious.

My family doesn't follow a paleo diet, but I am always loking for ways to eat healthy, and this recipe for a tasty treat looks amazing! I make almond butter homemade and never thought to use it in a cookie recipe like this! I like how simple the recipe it is and how quickly the cookies can be made! I always try to have a cookie jar full of fresh baked cookies on the kitchen counter, and I look forward trying these cookies next! Yum!
