Can you believe that zucchini can take on the taste of apples so well that it doesn't even taste like you are eating anything but apples? I love this idea. I know it works because my mom makes this amazing chocolate cake that uses two cups of shredded zucchini, and we can't get enough of it. It is the moistest, most decadent chocolate cake I have ever had.

This is such an interesting concept! I've used zucchini as a substitute for carrots in carrot cake and was very happy with the results! Since zucchini tends to be a watery vegetable, it might be helpful to add a little bit of cream of tartar.
