Skinny Fruit Dip
"Skinny Fruit Dip is a low fat, simple and delicious recipe that is ready in minutes. Try this great recipe for a lean dessert, low fat appetizer or healthy lunch! Serve with any seasonal fresh fruit! Once upon a time, many years ago, there was a fruit dip that my Grandma Rose made that was sooooo good and rich! So wonderful was this dip that you could actually eat it by the tablespoon, the fruit being a bit of an afterthought! Rich and creamy, Grandma made this dip with lots of cream cheese, marsh mellow cream and powdered sugar. Was it good for you? Nope. Was it incredibly delicious? Yup, it sure was! Talk about Heaven by the tablespoon! No party was complete without Grandma Rose’s awesome fruit dip! This being said, I put together a fruit plate for a recent family gathering. Thinking about what type of dip to use, I pulled out my Grandma’s well worn cookbook. There were her worn recipes, all written out carefully in her precise handwriting. A little note by this recipe made me smile: “Good” it stated in caps with several exclamation points! And so it is. However, in the name of lower fat, lower cholesterol, lower calories and the fact that my kids exclaimed “EEEEEW” when told about marsh mellow cream, I decided to recreate this magic dip. So, with just four ingredients, skinny fruit dip was born. I use low fat cream cheese, plain Greek Yogurt, a dash of almond extract and honey to equal a fruit dip you can enjoy by the tablespoonful that is on a par or better the original version! (Sorry, Grandma!) Ready in five minutes, this is a perfect accompaniment to fresh fruit. Serve Skinny Fruit Dip with fresh fruit as a lean dessert, low fat appetizer, or healthy lunch. This will definitely be a “do again”! Makes two cups of dip and keeps well in the refrigerator for up to a week."
