Blueberry Lemon Smoothie
"Sweet and tart flavors pair perfectly with vanilla and coconut aroma in this antioxidant-rich drink. Make it for breakfast or take it to work for lunch. It stores well in the fridge for up to a day but is tastiest when freshly blended. Blueberries are one of the most antioxidant-rich berries out there, with research showing that blueberry antioxidants can even help fight cancer. Besides their powerful antioxidant potential, blueberries together with the lemon juice in this smoothie provide 35% of the RDI for vitamin C, an antioxidant vitamin you need for a healthy nervous system and beautiful skin."
NotesPreparation Tips- You can boost the fiber content of this smoothie by adding chia seeds, flax meal, or a fiber powder. This will also result in a thicker smoothie. If you don’t have blueberries on hand, feel free to use other berries but keep in mind that this may result in a tarter-tasting smoothie.
